What is the “black vein” of the shrimp and what happens if you eat it?

The “black vein” in shrimp (often called the sand vein, back vein, or dorsal tract) is not actually a vein in the blood-circulation sense. It’s the shrimp’s digestive tract (intestine), running along the top/outer curve of its back from head to tail.

This dark line contains partially digested food, waste (yes, essentially shrimp poop), grit, sand, silt, algae remnants, and tiny bits of organic matter that the shrimp ingested while bottom-feeding in the ocean or farm ponds.
